Would this be good for arthritis in a horses knee?

Ice Tight helps reduces swelling by drawing it out. Not sure it will help arthritis. It usually goes under a leg wrapping so to work you might have to wrap the knee.

Do you have to wrap the leg after applying the product?

You do not 'have' to but there are benefits to wrapping as the poultice last longer and draws more out. You can just apply the poultice and turn them out also. It really depends on how bad the inflammation is or the results you're trying to achieve.

What about use in the winter, can it be removed with wipes or does it need to be directly sprayed for removal?

It dries into a powdery clay that you can actually brush off…. But I would certainly wash the legs if you plan on using any brush boots or wraps.
