Not very good at all. FAIL!
I purchased this ham thinking that it would be similar to other country hams I've had in the past. I was wrong. The ham itself was almost wet feeling when the package was opened, with a noticeable sour smell. Which is strange for a dry ham. I attributed this to the vacuum packaging.It was salty the way country ham should be, however the cure was inconsistent. There were places on the ham slices that cooked grey, not the nice pink that a fully cured ham would usually have. The sour odor could have come from this. The texture of the ham also was off, when peeling the slices apart before cooking. They were fairly sticky, and there was bone dust left on the meat from the sawing of the hams.In my experience with country hams, there is always a "funk" that is desirable like cheese. This comes from the ageing process. However the "funk" or aged taste in these slices is not pleasant it is more of a "gone bad" smell. I've used up most of the ham I bought, but there have been a couple of pieces that I've eaten that I have questioned weather I've made a mistake or not. I have a strong stomach thank goodness. I've never had to choke any ham down, but this costs almost 17$ a pound. I'm going to eat all of it. I'd add that the date on the package to use by was dated for mid March 2024, I received it Mid Feb. 2024.........*Update, last package completely spoiled! This is rotten! Mid March 2024. The smell made my wife throw up. I don't know if my stomach is strong enough this time.
