Excellent Fava Beans! Highly Recommend!!
The beans in the package I received were in great condition and didn’t have any grit or bugs. I used them for minestrone that I made. The minestrone recipe called for soaking the fava beans for just 8 to 16 hours. I followed the soaking instructions on the bag containing the beans, and soaked them for 24 hours. I added some salt, about 1 1/2 teaspoons, to hot water and filled the bowl in which I was soaking them. I soaked the fava with cranberry beans and chickpeas (the recipe called for those 3 kinds of beans). At about 12 hours, I poured out the existing water and refilled with hot salted water again. At the end of 24 hours, I poured out the water and peeled the skin off of the fava beans. I don’t know if the salt helped or not with making the skin easy to remove, but the skins weren’t difficult to removed, once I was able to start peeling it back. The skins are very leathery and tough, therefore you will always want to peel the skin off, and it wasn’t possible without soaking the beans first. The beans cooked up to be nice and soft in the soup!! They were delicious too! I highly recommend these beans!!!
