Will these start to show knife and fork marks? Is the wheat plastic soft?

The wheat straw plate is made of wheat straw fiber, it's the characteristics of lightweight, unbreakable and environmentally friendly. Although it cannot match the hardness of ceramics, it will only leave slight scratches when the knife and fork are used hard, so you can use it with confidence. Hope it will help for you thanks and have a good day.

Will these plates show a stain when something like spaghetti sauce is on them?

No, they resist stains very well. But although they claim to be microwave safe, they are good for reheating a plate of food. Not cooking. They’ll melt.
