Good flavor but nothing fancy. Basic, versatile sauce
Despite the authentic made-in-Italy selling point of this sauce, I would still say it's a tad overpriced for what it is: pasta sauce with no special ingredients. It has good flavor bordering on home-made but it isn't particularly memorable. It's a little sour/acidic but not bad, it's not strong on the garlic or other herbs, it has a generic tomato-y flavor with no distinct spice profile. It's not chunky (no large tomato chunks or tomato skins), and is a little thinner than some brands but not so thin as to compromise quality. I do appreciate that the ingredients are simple and traditional. There's no soybean oil, added sugar, or other Americanized junk. It's not organic and both tomatoes and olives (including the oil) tend to be pesticide-heavy crops so for this price, I would go for organic at least. As someone who has been spoiled by actual homemade, from scratch, authentic Italian pasta sauce, this does come close as a pantry stable alternative. It doesn't taste preserved or jarred like some grocery store brands. However, for this price, I'm not sure I would purchase this regularly.

Nice basic sauce for when you cant be bothered to make your own
In terms of flavor this is decent. The biggest selling point for me is that there is sweet taste to this sauce. I always add veggies to my jarred sauces which I like to use as bases when I am too lazy to even throw some canned tomatoes in a sauce pan and season it up. I always sauté onions, peppers, cherry tomatoes, and garlic before adding a jar of sauce to them and then tossing in my noodles. This sauce makes for a good base when I am lazy. It's definitely a fresher flavor than something liker Bertolli even if you are getting organic versions. If you a bit of extra time you ought to save yourself the ridiculous price tag and cook down a tomato puree from canned tomatoes with some sautéed veggies. All you need is a bit of dried basil and oregano to give you a competitively similar flavor. If you dont have the time but you do have the money (2 pack is $24), this is a solid pasta sauce that will give you a classic sophisticated flavor without the sugar and additives of many jars on the shelves.

We were surprised by how good this was. Pricey, but worth it.
This sauce is beautifully packaged, which kind of made me feel we were receiving a gift. Both jars were intact and nestled snugly in their box. It was my husband's turn to make dinner the other evening, and he went with this sauce, angel hair pasta, and freshly, finely-grated parmesan. No additions at all, so that we might review it as-is. I am a from-scratch sauce person. I never order spaghetti in restaurants because I like the sauce I make better. I really was just hoping that our Carbone-sauced dinner would be good enough that I wouldn't feel less than satisfied afterwards. Well, I have to say we were both impressed. When hubby opened the jar, he brought it to me on the other side of the house just so I could smell it. Fresh, rich, interesting. He served it with black garlic toast and we dove in. Absolutely delicious. No other way to say it. It was "brighter" than my from-scratch sauce, but I add some balsamic reduction to mine that takes the acidic edge off the tomatoes. The sauce has a nice complexity and doesn't just scream TOMATOES. We both cleaned our plates. The next night, we had some toasted raviolis and used the rest of the jar of Carbone as a dipping sauce for them. It was truly perfect for that! My only issue at all with this sauce is the price. At this writing, it's $12 a jar, which seems like a lot. It IS a lot, compared to grocery store jarred sauces. But when you figure you can have a restaurant-quality meal for two for $12 plus the minor cost of pasta and parm, with no tweaking and testing and tasting... I have to say it's worth it. We're going to try the Arrabbiata next! Bottom line: Excellent sauce, pricey, but worth it. Good value. Horribly acidic
Do not even bother spending your money on this. It is VERY acidic and tastes like microwaved "jarlic". My daughter said it tastes the way throwup smells. It is absolutely awful. Please google reviews before making a blind purchase like I did.
