My son is 3 years old and 35 lbs. Would the large be big enough?

They should, they are supposed to anyway. I have them for my one year old and they are ok a little snug but they work :) alot better than using the disposables. They come clean really easy too.

my daughter is 25 lbs. would the large size adjust small enough to fit her?

My son is about the same. He’s mostly belly so the large is actually quite comfortable haha. He had a smaller size and it was way too tight on his belly. It depends on how she’s built, but my guess is you will have no problem!!

Small or large for 12mo 19.5lb?

My son is 11 mos and 18 lbs and I bought the small. They are adjustable and I'm sure the small would fit but my baby was on the largest setting but they fit great. If you want room to grow I would go with large and start the baby off on the smallest setting. If only using for a month or so, I'd say you could go with the small and it would fit perfectly.

Is the interior mesh considered “athletic type material” or is it mesh with large holes ?

I would say it's like athletic type material, not large holes.
